Inspired


Dawn has really inspired me to do more cooking with the start up of her new blog. Yesterday I went shopping at Trader Joe's to get some good ingredients and ended up leaving with pesto- I intended on using it on the mahi mahi I also bought, but today I decided a chicken pesto pizza sounded much better than fish. I couldn't find a chicken pesto pizza recipe that I liked... and I figured I didn't really need a recipe for that part- my goal needed to be finding the perfect pizza crust. I started searching some of the more popular foodie blogs and quickly came across this recipe made by Elise at Simply Recipes. The dough has very few ingredients but takes a lot of time- well worth it if you get a good pizza out of it I think. I started the dough at 3:15 and was done making it by 3:45 - I put it in the oven (had heated the oven to 150 and then turned it off when I put in the dough) to rise and left to get Deacon. I got back around 5 and the dough was PERFECT. It wasn't sticky or hard to work with- in fact, I have never worked with an easier dough! I drizzled the dough with UC Davis olive oil, spread some crushed garlic on top of that, covered the pizza in pesto sauce, coated the grilled chicken with pesto, put that on top of the sauce and then covered the pizza in gorgonzolla and mozzarella cheeses. 10 minutes in the oven and the pizza came out looking great and tasted even more amazing. Definitely a keeper and I highly recommend this dough!!!

I love making my own dough, too. I've perfected my own recipe. It is sooo much fun, isn't it?!?

BTW, I use the same recipe as the one you used, except I add a tablespoon of Italian seasoning mix and instead of sugar I use honey!
